Sometimes when it’s crazy hot out, nothing sounds better for lunch than a big salad. Luckily, my kiddo loves salads so last week when the temps were in the mid 90’s, sending her off to school with a salad in her lunch box was a no-brainer.

In this simple salad lunch from last week, Camryn had mixed spring greens, cilantro, sliced carrots, tomatoes, shredded cheese, a shredded chicken breast, corn chips, and strawberries.

The chicken breast was leftover from dinner the night before.  It simmered low and slow in salsa verde, chicken broth, and a little taco seasoning, so it had lots of flavor and was still plenty moist by lunch time the next day.

I also packed a small brownie in a separate container but that came home uneaten. This container however, was mostly empty.

I went with a pumpkin theme for today’s lunch.

Or maybe it’s a pumpkin/bell pepper theme because that taller sandwich looks more like a bell pepper to me than a pumpkin.

Do you see it too?

The two “pumpkin” sandwiches are filled with chocolate hazelnut spread. These were made using some inexpensive cookie stamps that I found at Wal-Mart last year. I bought a bag that contained several different cutters and didn’t get to use them all during Halloween week last year.

I also attached a cute pumpkin sticker (found on sale of course) to a Babybel, and tossed in some black grapes with these cute eye picks, pumpkin-shaped pretzels, and a few pieces of candy corn.

 

 

It’s Halloween Bento Week!

I love Halloween.

I mean, dressing up as anyone or anything you want in exchange for free candy and fun treats?

I’m in!

But my favorite part of Halloween has actually become the lunches that I make for Cam.

I think she looks forward to eating them as much as I look forward to making them for her.

Last year I made her a different Halloween themed lunch every day for a week leading up to Halloween.

That went over so well that I’ve decided to do it again.

But before I show you today’s lunch, I wanted to share a few of my favorite Halloween lunches, in case you need some spooky lunch inspiration.

Now, on to today’s slightly spooky lunch.

I found the super cute Halloween pasta at Aldi last week for $1.99 and knew right then that I had to use it in one of Cam’s lunches.

I mixed in a few tomatoes because they reminded me of pumpkins and big yellow moons, and sprinkled Italian seasoning over the top which she suggested could represent graveyard grass.

She also has a banana ghost which is just a banana cut in half with chocolate chip facial features and a cute little hat.

I also used cutters from this set to make apple ghosts. The facial features were cut from the apple’s skin. I used a golden delicious apple which provided the perfect shade of ghostly glow green (say that three times fast).

It’s well documented here on this site that taco salad is one of my daughter’s favorite lunches.

She has three tests today so I thought a big taco salad would be perfect for lunch today.

So taco salad it is!

I pack it up pretty much the same way every time. I like to chop the romaine so it’s easy for her to eat with a fork, then I add shredded cheese, chopped bell pepper, and chopped tomato in a separate container so it doesn’t make her lettuce and cheese soggy.

Then I add a few tortilla chips on the side and some warmed taco meat in her thermos.

All she has to do at lunch time is just mix everything together and she’s good to go!

She also has a little fruit in the medium-sized section for a sweet treat.

Cam’s Easy Lunchbox holds a cute sandwich, chocolate covered almonds, carrot coins, chopped celery, a few veggie sticks (I seem to have a bottomless bag), and some good advice courtesy of one of our Lunchbox Love notes.

Cam loves finding Lunchbox Love notes in her lunch every day.

In fact, when I sent her off to school without one last Friday, she was sure to let me know that going forward, that would not be satisfactory.

Whoops.

So along with today’s Lunchbox Love note, the little one has two tiger sandwiches that I made with our Cuddle Palz cutter from CuteZCute, some red pepper rings, and a few veggie straws.

How’s your weekend going?

Are you doing anything super fun?

I hope you are, unless you’re into relaxing this weekend and in that case, I hope that’s what you’re doing.

My husband and kids are currently in our living room watching video game previews :/ so I thought it would be a good time to share another work lunch that I made for my husband.

It was either that or folding a load of laundry and I think we all know how excited I get over that chore.

His Easy Lunchbox contains a turkey and romaine wrap on a whole wheat tortilla that I smeared with a little horseradish/dijon mayo, a few fresh raspberries, some homemade pickles, and a couple of apple slices that I smeared with Wild Friends Chocolate Coconut Peanut Butter, dipped in dark chocolate, and sprinkled with seat salt. Yum!

I made his wrap when the tortilla was cold so it ripped.

This is real life and in real life, wraps rip.

Say that three times fast.

If apples aren’t your thing or maybe you’re just in the mood to trash things up this weekend, have I got an idea for you…

Just smear some peanut butter (I used Wild Friends Sesame Cranberry Peanut Butter) on a few chips, dip them in melted dark chocolate, and then sprinkle a little sea salt on top. Pop them in the fridge or freezer to set, and munch away!

I really like the addition of the dried fruit in these so if you have any, chop it up and add it to the peanut butter before you smear it on.

If you’re using a smooth peanut butter, you can just stir it into the chocolate, dip, set, and you’ll be good to go.

Any time we have tacos for dinner, Cam always gets the leftovers in her lunchbox the next day.

That kid loves her tacos.

The challenge with taco salad is that you almost always have cold food that needs to stay cold, and hot food that needs to stay hot.

Cold taco meat? No thank you. Warm lettuce? Not going there either.

So I pack all of the cold stuff in one of her Easy Lunchboxes while I’m putting dinner away that night, and then in the morning, some seasoned ground beef (and/or beans if we have them) goes into her preheated thermos.

When lunchtime rolls around, all she has to do is put the ground beef on top of her lettuce and cheese, toss those chopped tomatoes over the top, and eat it all up!

Sometimes she crumbles the tortilla chips on top as well and then mixes everything together, sometimes she eats them separately, sometimes she uses them as little scoops. She’s fickle.

In the middle-sized section, she has a mixture of rice, black beans, corn, cilantro, and lime (also leftover from last night’s dinner).

Happy Valentine’s Day!

For lunch today, Cam has a few chocolate pancakes cut with heart-shaped cookie cutters, organic fruit leather (also cut into heart shapes), fruit snacks, cheddar cheese hearts, red pepper slices, a tomato heart, and a few grapes on heart picks.
