Is pizza grilled cheese a thing?

I mean, is this something that people are doing?

I haven’t checked Pinterest because every time I think that I’ve come up with an out of this world original idea, Pinterest is there to remind me that everything has already been done.

Thanks a lot Pinterest.

And while we’re on the subject, did you know that yesterday was National Grilled Cheese Sandwich Day?

I sure didn’t. I found out after I had already made lunch. I love when that happens.

Here’s how this particular sandwich masterpiece comes together:

Just like you would if you were making a regular old grilled cheese sandwich, you’ll need to spread butter on one side of two slices of bread. Then shake a little garlic salt and Italian seasoning over the buttered bread.

Fill the sandwich with your favorite pizza fixin’s: Italian cheese blend or mozzarella, pepperoni, ham, peppers, onions, olives, mushrooms, etc. You get the idea.

Cam isn’t very adventurous when it comes to pizza so the most she will let me put on her sandwich is cheese and pepperoni, but put whatever you or your kids like on yours. I’ll be cramming as much as I possibly can on mine – who’s with me!?

Once you’ve got your ‘pizza toppings’ on your sandwich, close it up and toast in a saute pan on the stove top over medium heat.

When it’s golden brown and toasty on both sides, slice it up and serve along with warm pizza sauce for dipping.

Cam thought this was genius. She was not so thrilled about the idea of taco grilled cheese sandwiches though. I still think I can make it work. I’ll keep you guys posted. 😉

Along with her sandwich she had a flapjack from our Graze box with a few chocolate chips tucked underneath, and some sliced peppers.

 

 

 

 

A Special Daily Bento

Yesterday was a very exciting day in our house.

Miss Camryn received an acceptance letter from Mensa and she starts the gifted program at school on Monday.

We met the teacher of her school’s gifted program yesterday and she told us that the gifted kids get to eat their lunch at a special table up on the stage in the ‘cafegymatorium’ (my term for the school’s cafeteria/gymnasium/auditorium).

Also, they eat lunch at 11:55, A normal lunchtime! And they get snacks!

Finally, someone gets it.

Such exciting developments deserve a pretty special lunch.

Today’s lunch includes some of Cam’s favorite things:

 

Cam loves pink so I included as much pink as possible.

She has pizza bites and peppers on little pink skewers, pink watermelon flowers in a pink little pig, some fruit-leather cut-outs, and some pink strawberry cookies.

I didn’t get around to making the cookies until late last night and by then I certainly didn’t feel like making them from scratch.

Since I’m not opposed to taking a little help from the store every now and then, I grabbed a box of strawberry cake mix, dumped it into a bowl along with 2 eggs, 1/3 cup of vegetable oil, some sprinkles, and a couple handfuls of white chocolate chips. I mixed it all up, rolled the dough into balls, placed them on a baking sheet, and baked them at 350 degrees for about 10 minutes.

The cookies cover her intense affection for strawberries, sprinkles, chocolate, and the color pink.

I don’t know about you, but I couldn’t be happier that it’s Friday.

Two days of sleeping past 5:40! Sounds good to me.

 

My favorite grocery store makes pizza dough in-house and it’s delicious. So when I see it go on sale, I always grab a couple pounds of dough to stash in my fridge. There are so many things beyond pizza that you can make with it.

Last night however, my kids wanted cheese pizza. So that’s what they got. They love flavored pizza crust so I brushed the crust with a little olive oil and then sprinkled some garlic salt and Italian seasoning on it before I put in the oven.

The leftovers went into their lunches today. My kids have no problem eating cold pizza.

I cut Cam’s into bite-sized pieces for easy eating. She also has a fruit leather, grapes, celery, and a flapjack from our Graze box.

Both lunches took me no more than 10 minutes to pack. I made them last night and tossed them into the fridge so that they were ready to go this morning.

It’s Monday. The perfect day for a quick and easy lunch. Even though this lunch doesn’t look simple or like it came together quickly, it really did. From start to finish, today’s lunch only took me about 5 minutes to pack.

The kids had pizza for dinner last night and they both asked for the leftovers to be put in their lunches today. Personally, I don’t care for cold pizza but the kids love it and that makes things easy for me so pizza it is.

Once their pizza had completely cooled, I cut a slice into bite-sized pieces and included a couple of elephant picks to make it easier for my little one to keep her hands clean. I also added some raw spinach, an all-natural chocolate chip cookie, grapes, and a few pieces of fresh pineapple with her nickname in picks. She also has some iced green tea in her thermos to drink.
