Today is Camryn’s 6th birthday!
So I made her a fun and festive lunch to celebrate her special day.
For her birthday lunch today, Cam has popcorn chips, strawberries, a party grape, a party tomato, and a cupcake.
She also has organic mac n’ cheese in her thermos:
I went to the craft store yesterday and bought a huge pack of birthday themed scrap booking stickers for $2.40 after coupon to help cuten up her lunch. I still have quite a few left over so I’ll put them away for next year’s lunch.

So I made her a birthday themed lunch today.
Please excuse the picture quality. It was pouring rain and gloomy this morning so my pictures came out really dark and blurry 😦
I made Camryn a layered chicken sandwich cake with cheese decorations and stuck a little party hat on top to hold everything together. I also added pretzel tiaras, dried strawberries & apples, cupcake flavored goldfish, two pieces of vegan chocolate cake topped with bows to look sort of like presents, two grape tomato balloons, and the party cheese guy is back!
Can’t have a birthday themed bento without the party cheese guy!

Wine Cupcakes!

We’re talking about wine, cupcakes, and friendship today!
All good things.
We’re discussing these things because today happens to be my best friend’s birthday.
We’ve been friends for over 20 years! That’s a long time.
That deserves a blog post.
Being friends as long as we have, there are a lot of great memories that we share.
We rarely talk on the phone but when we do, we usually end up laughing hysterically for hours over the things we did before we knew any better. In other words, our 20’s.
One particularly hilarious memory for me, revolves around a couple of bottles of red wine & how we learned late one night the best way NOT to open them. Word to the wise – corkscrews have a purpose. Keep ’em on hand… just sayin’.
In honor of her special day, I’m posting a recipe that reminds me of her.
These cupcakes are definitely for grown ups. There is wine in the cake & wine in the frosting, I also highly recommend serving them with a glass of wine.
Especially if it’s your birthday.

Sweet Red Cupcakes
For Cupcakes
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
1 stick butter – room temperature
2 large eggs
1/4 sweet red wine
1/4 cup milk
For Frosting
8 oz. cream cheese – room temperature
2 tbsp sweet red wine
16 oz. package confectioner’s sugar
1 tsp vanilla
red food coloring – if desired
Directions
Preheat oven to 350 degrees.
Whisk together flour, baking powder and salt. Set aside.
In a separate bowl using your stand or hand mixer, beat sugar and butter until light and fluffy. About 2-3 minutes.
Add eggs, one at a time, and mix until completely incorporated.
Add wine & milk & mix until combined.
Add dry ingredients & mix until smooth.
Fill cupcake tins about 2/3 full & bake for approximately 15 minutes or until toothpick comes out clean.
Cool for a few minutes before removing from pan.
For Frosting
Beat cream cheese and wine with stand or hand mixer until smooth. About 2-3 minutes. Gradually add in confectioner’s sugar and vanilla until well blended. Frosting will be pale pink. Add a couple drops of red food coloring if you want a deeper colored frosting. Frost cupcake tops.
