Lunch for the 4th

7-4 lunch

 

For lunch today Camryn had a BLT on a hot dog bun (BLT dog?) It’s so much easier for her to eat that way. Bacon is straight, hot dog buns are straight, how did I not think of this before?

She also has some cheesy cut-outs made to sort-of resemble fireworks and of course she had to have a cheese pig since there’s bacon on her sandwich. 😉

In the smaller sections she has apple fries, some star-shaped cereal, and a scoop of homemade mint chocolate chip ice cream with a few rainbow sprinkles on top.

How are your kiddos doing with their summer reading?

One of the things that Camryn looks forward to the most during the summer is our weekly trip to our local library to check out books.

It’s dreadfully hot here in the south during the summer so most days she likes to spend her afternoons inside with her nose in a good book.

Camryn started reading independently when she was three and has loved reading ever since so I thought it might be fun to present her with a little challenge.

Or a big challenge depending on how you look at it.

The challenge is to see if she can read 100 books before school starts on August 19th.

Can she do it?

I’ll be posting the books that she’s read here each week so that you guys can keep track of her progress and I hope that you’ll suggest some books for us to check out from our library too.

Need a really last-minute Father’s Day gift?

Yeah, I can’t really help you there but I did whip us up a quick Sunday snack.

I should probably tell you that my husband ate them all though.

He’s a big fan of the whole chocolate & peanut butter combo.

Personally (and I know this is crazy talk) I could do without it.

My heart belongs to chocolate & caramel.

I did eat a couple of these, for quality control purposes of course, and I can attest to the fact that they are yummy.

They’re also really quick and easy to make which is always good because that means we can eat them faster!

Ingredients:

1/4 cup chocolate chips (milk chocolate or semi-sweet)

1 Tbsp nut butter (I used natural peanut butter)

Pretzels

Sprinkles (optional)

Directions:

In a microwave safe bowl, heat the chocolate chips and peanut butter on high for about 30 seconds, stir halfway through.

If the chocolate still isn’t melted after 30 seconds and a good stir, give it another 10 seconds in the microwave but don’t overheat it. There’s no saving burnt chocolate.

Once the mixture is smooth, dip your pretzels. You can completely submerge or just go for halfsies like I did.

It’s easier to dip into a bowl or container that is taller than it is wide. I use a small plastic container but something like a juice glass would work too.

Give each pretzel a few taps on the side of your bowl after you dip to get the excess chocolate off.

Lay the pretzels on wax paper or a silicone liner to set up. If you plan on adding sprinkles, now would be the time to do that.

Once you’ve dipped all your pretzels put them in the fridge or freezer for a few minutes to set up so you can eat them.

If you want to make a lot of dipped pretzels, just double or even triple the amount of ingredients listed. You really can’t mess this one up. You can even mix nut butters. Go for half cashew butter & half almond butter if that floats your boat. Try peanut butter and white chocolate. Biscoff would work here too – just sayin’.

And why stop at sprinkles? Crushed cookies, mini chocolate chips, or crumbled potato chips would also be great on these.

A Simple Snack For Summer

Is it hot at your house too?

It was 90 degrees here today and it’s only going to get hotter.

Summer is no joke.

Come snack time, cool treats beat out everything else.

So I whipped these frozen fruit and yogurt bites up in just a few minutes for my kids to snack on this afternoon.

They don’t take long at all to freeze either which is a good thing because my kids are not patient people.

As I was eating them I couldn’t help but think that they would be great on top of a salad.

Somebody try that and let me know.

Anyway, to make these for your kids (or yourself) just wash and dry some fresh fruit, then coat in yogurt, add toppings, and freeze on a large plate or sheet pan covered with wax paper until hard.

I added wheat germ, chia seeds, hemp seeds, and a few sliced almonds here and there to the tops of our fruit.

If you’re using a thinner yogurt, you may want to dip them a second time once they’ve firmed up a bit in the freezer so you get a nice thick layer of yogurt. Add your toppings after the second dip.

I used cherries (which had been pitted and cut in half) and red grapes but you could use any fruit you prefer.

Obviously the toppings are up to you as well.

Chopped pistachios and chocolate drizzle over cherries?

Heck yes.

Bring it on summer.

FunBites Review & Giveaway!

I was asked recently by FunBites if I would be willing to review one of their cutters.

I’m pretty sure that I was the only blogger left in lunch land that didn’t already have one of these. So I think you know what my answer was.

FunBites come in two styles: Cube It! which makes 12 square bite-sized pieces, and Luv It! which makes a geometric heart pattern and two smaller hearts.

I chose the Cube It!

Using FunBites is easy:

Step 1: Place FunBites cutter on top of food.  Remove popper top and set to the side.

Step 2: Grab cutter handles on both sides, press down firmly and rock 5-6 times to cut through the food.

Step 3: Lift the cutter up, insert popper top and pop out the bite-sized pieces!

FunBites cutters can be used on sandwiches, fruit, veggies, pizza, burgers, tofu, omelets, cheese, pancakes, pretty much anything.

Seriously, these cutters are tough!

I wanted to do something a bit different with my FunBites Cutter so I used mine to make bite-sized butter cookies. The type of cookie really doesn’t matter here, just make sure your dough is nice and cold.

I like to roll mine out between two sheets of wax paper, so it doesn’t stick, lay it on a sheet pan, and then pop it into the freezer for 20-30 minutes.

Once the dough was chilled and firm, I used my FunBites cutter to cut out the dough squares:

If your dough has chilled enough, you should get nice clean edges just like that up there. However, if your dough sat out for a bit due to… oh, I don’t know, kids who are on spring break and “need you” every two minutes – your dough might not come out so square. If that happens, just tap the edges down lightly with your finger. Easy peasy.

Cookies this size don’t need long to bake. Mine took between 5-7 minutes.

Then I got to thinking about other things I could do with the FunBites Cube It!

I had a can of cinnamon rolls in the fridge – perfect! I rolled each of them out just a little and then used the Cube It! to cut little squares. These little cinnamon squares were a big hit with both of my kids. You can serve them with the glaze on the side for dipping as I did below or toss them with the glaze and let them set before you serve them.

I also made:

I just made a grilled cheese sandwich, let it cool for a few minutes so the cheese could set a bit, then cut it with my FunBites Cube It! I plopped a few on top of some veggie soup and it was lunch. If you like your grilled cheese to stay more crisp, just serve them alongside the soup rather than in it. Or serve it on a skewer with some lunch meat and/or a tomato in between for dipping, Yum.

And lastly…

If you’re buying croutons you need to stop it! It’s way too easy (not to mention cheaper) to make them yourself. They taste better too. I use whatever bread we have lying around, this is actually whole wheat sandwich bread. I cut the bread with my Cube It! then I tossed it in a bit of extra virgin olive oil, sea salt, garlic powder, and Italian seasoning. Then I toasted it on a sheet pan in a 300 degree oven for a few minutes until toasty.

After using the FunBites Cube It! for a couple of days, I can see where you could literally use it for every meal. I used it for breakfast, lunch, snack, and even a sweet treat but you could also use it to make bite-sized appetizers or to cut food into a safer size for little ones.

How To Eat Yogurt With Your Fingers

My kids love yogurt. In fact, after much pleading from me for her to try it, my littlest has recently discovered that she loves yogurt so much, she eats a huge bowl of it every night after dinner with fresh fruit mixed in.

Today I made her a spoon-free version for her afternoon snack & it was a huge hit.

All you need is yogurt & a silicone mold. You can find silicone molds at crafting or baking supply stores. I can usually find them in the $1 section at Super Target or at The Dollar Tree around the holidays.

You can leave them plain or embellish with fresh fruit, sprinkles, or anything else your heart desires.

For my skulls, I put 2 large blue sprinkles at the bottom of a skull-shaped silicone mold. Then I poured a spoonful of yogurt on top, filling the mold. I used the back of the spoon to level the yogurt. Freeze for a few hours or overnight if you can & then pop them out when you’re ready to eat. That’s it! Super simple.

*These can also be made the night before to pack in a well-insulated lunch box. They will defrost & soften a little by lunch time so pack a spoon to make eating them easier.

Sandwich Sushi

When I was a kid, I hated jams & jellies of all kinds.  So my parents would send me to school with peanut butter & mayonnaise sandwiches, banana & mayonnaise sandwiches, peanut butter & banana sandwiches & one sandwich I vaguely remember that had pineapple, cheese & most likely mayonnaise on it as well. Needless to say, I got a lot of sideways glances at the lunch table.

Now that I’m packing lunches for my kids, I’m the one catering to their specific tastes. My oldest eats the same sandwich every day. He never gets tired of it. My youngest doesn’t like sandwiches of any kind. We’ve covered this issue in the past. So I have to be a little more creative with her.

I like to make sandwich sushi for her from time to time because it’s easy & most of the time, she’ll eat it. She also thinks it looks really cool so that makes me a hero – I like being a hero.

Sandwich sushi is all over kids’ bento-land. I’m sure you’ve probably seen it done in some form or fashion before you stumbled upon this post. I thought it would be nice to post a quick tutorial just in case you had never actually seen the steps. It’s super simple. Here’s how you do it…
